100% Syrah

A classic Syrah, dark and peppery, with black fruit and black olives, from a special dry-farmed vineyard on the slopes of the Bottelary Hills. It’s the highest plot on the farm and is bathed by breezes from False Bay which means the grapes ripen slowly and preserve freshness.
100% whole berry ferment with natural yeasts. The wine is pressed and starts fermentation in tanks. When the peak of fermentation has passed the wine is transferred to used oak barrels where it ferments to dry. The wine is racked after fermentation into 500l French oak barrels where it rests for 15 months before bottling. Bottled without fining or filtration.
Winemaker Kayleigh describes the wines as: "made naturally, no alterations or adjustments, just pure terroir and honest reflections thereof".
